At la maison de COCO, the classic Italian almond biscotti, having stood the test of time, gets a tasty make-over for the 21st century. Our pastry chef, of Italian descent, reinvents the traditional biscotti of her childhood and adds a discrete touch of ginger to the recipe. For others, she mixes in hints of cinnamon and chocolate to produce biscotti which pay tribute to the ancient Mayan culture. But in a true show of culinary whimsy, her “Margherita”, the colorful tart cherry and pistachio biscotti, is a not-so-subtle reminder of their Italian heritage.
